| Vintage / Winemaking: A elaboração de um Espumante a partir da casta Alvarinho obriga a uma escolha criteriosa das uvas. O mosto resultante desta selecção fermenta a temperatura controlada, obtendo-se o vinho base para espumante. Este vinho sofre, já em garrafa, uma segunda fermentação. A permanência na cave, a temperatura baixa e constante durante vários meses permite que este espumante mostre toda a elegância da casta Alvarinho. Finda esta fase de fermentação e estágio, procede-se ao "degorgement", operação que permite a eliminação das leveduras existentes em garrafa e a substituição da cápsula metálica provisória pela rolha defnitiva típica do espumante |

Soalheiro is the first Alvarinho brand in Melgaço (the northern point of Portugal) and one of the first portuguese producers of Alvarinho. Here, the Alvarinho is special, the region is protected by a range of mountains that create the perfect conditions of rainfall, temperature and number of hours of sunshine needed to the better ripeness of the Alvarinho grapes.
