Maturation: This wine rekindles the Dão region's age-old custom of aging white wines for long periods in old oak casks; a practice that occured throughout the year and was subject to various climatic conditions. This white consists of wines from 2005, 2006 and 2009 and has, on average, aged for 10 years in used 225-litre oak barrels of varied usage | Consumption temperature: 12-14º |

Vintage / Winemaking: The varietal grapes destined for this wine arrived at the winery in small 20kg boxes and were unloaded directly into a pneumatic press. The musts, protected from oxidation by the use of inert gases, were subject to low temperature static decanting for a period of 24 hours. They were subsequently transferred to stainless steel tanks, where fermentation took place for around 20 days at controlled temperatures |
