About Portuguese Red Wines

Red wine is the most universal type of wine, the wine par excellence, the most widely consumed and probably the first wine ever made in history. As a general rule, red wine is produced from red varieties, as they take on the colour of the must of this type of grape, as well as the skins with which they macerate for a while to acquire their properties: colour, aromas, body and tannins.

Where is red wine produced?

Red wine is produced all over the world, although the biggest producing areas are Bordeaux, Burgundy, Napa Valley, Tuscany, Rioja (Spain and Argentina), and Mendoza.

Grapes for red wine:

For the elaboration of red wine, some of the most used grapes are Cabernet Sauvignon, Pinot Noir, Merlot, Syrah, Garnacha, Tempranillo, and Malbec.

In Portugal, the most representative and famous grape is Tinta Roriz, from which the most acclaimed red wines are produced. It is a very adaptable variety to different climates and soils, so its cultivation has
increased and extended to other regions, especially to Dão and Alentejo, where it has adapted particularly well, but also to regions such as Ribatejo and Estremadura.

Aging of Red Wine:

Red wine has several aging times:

Crianza wine (minimum of 24 months, 6 of which in barrels);
Reserve Wine (minimum of 36 months, of which 12 in barrels);
Gran Reserva wine (minimum of 60 months, 18 of which in barrels).

The most common aging vessels are oak barrels, the most used for red wines being French, American, and Russian.

Best pairings for red wine:

The most classic pairings for red wines are red meats, ham, cheeses, and, in general, all stews, although this depends on the type of red wine. Harmonizing red wine suggests a stronger, more complex combination.

Gamay and Pinot Noir are light options, with little concentration of tannins, and that work well with poultry meat (chicken, turkey, and quail), lean fish, pasta, and risottos prepared with vegetables, and soft cheeses.

In the middle of the table we have the Carmenérè and Merlot varieties, wines of intensity and medium body. Goes well with game meat, dark meat fish, and roast beef.

Tannat, Cabernet Sauvignon, Syrah, and Malbec are strong varieties, usually associated with intense flavor dishes such as red meat. As they are robust and very intense wines, the pairing with full-bodied red wines becomes somewhat limited.

Fat cuts like ribs or rump steak, for example, will go well with these varieties.
