Talha wine
Talha wine is a wine in which the entire tanning, fermentation and ageing process is traditionally carried out in clay pots, crushing the grapes with or without crushing, and fermenting with indigenous yeasts. There may be slight differences in the production and ageing process depending on the region.
After fermentation, talha wine can be drunk directly from the talha or it can be transferred to another talha and then bottled. It was usually on St Martin's Day that the carvings were opened and the wine of the year tasted.
Talha Wine is a wine that has fermented in the talha and then been transferred to a vat or barrel and has not undergone the same traditional fermentation and ageing process.
