"Out of the Box" Wines
The term “out of the box” has been used to refer to wines that try to differentiate themselves from the majority, often referred to as “conventional”. In other words, those wines which, at a certain point in their production process, ageing or sensory profile, follow a different path from traditional practices. This can be an experiment, an innovative approach or a return to techniques recovered from the past, such as the use of less common winemaking materials or the use of unusual grape varieties. It's common to find wines within this term that try to go further, defying treaties, in a search for originality that leads even oenophiles who have supposedly seen it all to look astonished
